Watermelon Mint Mocktail

Ingredients

  • 2 cups seedless watermelon, cubed and chilled
  • 1 tbsp fresh lime juice (about 1/2 lime)
  • 5-6 fresh mint leaves
  • 1/2 cup sparkling water 
  • Ice cubes
  • 1 tsp honey or agave syrup (optional)

Garnish (optional)

  • Extra mint sprigs
  • Watermelon wedge or lime slice

Instructions

  1. Blend the watermelon, lime juice and mint leaves until smooth. 
  2. Strain through a fine mesh sieve to remove pulp for a smoother drink. 
  3. Fill two glasses with ice cubes and pour the watermelon mixture over ice, filling each glass halfway. 
  4. Top with sparkling water and stir gently. 
  5. Garnish with mint, watermelon, and/or lime slices and serve immediately.

Tips:

You can buy 100% pressed watermelon juice in place of blending and straining watermelon.
