Ingredients
- 2 cups seedless watermelon, cubed and chilled
- 1 tbsp fresh lime juice (about 1/2 lime)
- 5-6 fresh mint leaves
- 1/2 cup sparkling water
- Ice cubes
- 1 tsp honey or agave syrup (optional)
Garnish (optional)
- Extra mint sprigs
- Watermelon wedge or lime slice
Instructions
- Blend the watermelon, lime juice and mint leaves until smooth.
- Strain through a fine mesh sieve to remove pulp for a smoother drink.
- Fill two glasses with ice cubes and pour the watermelon mixture over ice, filling each glass halfway.
- Top with sparkling water and stir gently.
- Garnish with mint, watermelon, and/or lime slices and serve immediately.
