Ingredients
- 1 cup dry orzo
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 1 cup peas (fresh or frozen, thawed)
- 3/4 cup cucumber, diced
- 3/4 cup cherry tomatoes, halved
- 1/3 cup red onion, finely diced
- 1/3 cup feta cheese, crumbled
- 1/3 cup fresh parsley, chopped
- 3 tbsp fresh mint, chopped (optional)
Dressing
- 4 tbsp olive oil
- 3 tbsp fresh lemon juice
- 1 1/2 tsp lemon zest
- 1 1/2 tsp Dijon mustard
- 1 garlic clove
- Salt and pepper to taste
Instructions
- Cook orzo according to package instructions. Drain and cool.
- Blanch the asparagus (boil in a pot of water for 2-3 minutes, then ice bath).
- In a large bowl, combine the orzo, vegetables, and herbs. Add the feta cheese.
- In a small bowl, whisk the dressing ingredients together, then toss everything together.
- Let it sit for 10-15 minutes before serving.
