Why We Love This Recipe:

Salmon is a rich source of omega-2 fatty acids (EPA and DHA). They have a crucial role in brain development and cognitive function. They also help reduce inflammation and lower the risk of heart disease.

The fiber from the sweet potatoes helps stabilize blood sugar levels by slowing down the digestion of carbs and prevents blood sugar spikes and crashes. Also, in combination with the protein and healthy fats from the salmon, it will keep you feeling full longer.

This is a great recipe to meal prep. They hold their texture and flavor for up to 4 days in the fridge. Or you can cook a batch, let them cool, and freeze them individually. On busy days, just reheat and serve with a whole grain bun or salad/grain bowl.
