Protein Cinnamon Roll Pancake Bowl

Ingredients

Ingredients:

  • 1/2 cup Kodiak Cakes pancake mix
  • 1/4 cup unsweetened almond milk (or milk of choice) 
  • 1 large egg
  • 1 tsp cinnamon 
  • 1/2 tsp vanilla extract

Cinnamon Swirl:

  • 1 tsp coconut oil, melted
  • 1 tsp maple syrup or honey
  • 1/2 tsp cinnamon

Instructions

  1. In a bowl, whisk the Kodiak mix, almond milk, egg, cinnamon, and vanilla extract until smooth.
  2. Microwave for 1 1/2–3 minutes, until set
  3. Mix melted coconut oil, maple syrup, and cinnamon. Drizzle over the warm pancake bowl. 
  4. Optional: Top with Greek yogurt, fruit, and more cinnamon if desired!
