Why We Love This Recipe:

Peaches are a great source of vitamin C, which supports immune health, skin, and collagen production. They are also a source of vitamin A in the form of beta-carotene, which is essential for the eyes and skin. All the colors from different vegetables in this recipe, such as bell peppers, red onion, and jalapenos, provide more antioxidants, including quercetin, lycopene, and capsaicin, which help reduce inflammation in the body.

This recipe is fresh, packed with natural sweetness, and has a little kick. Not to mention, it can be put together in 10 minutes, and no cooking is involved, making it a quick and easy recipe. It pairs very well with chicken or fish, or just eaten as a snack with some tortilla chips.

Peaches, bell peppers, and the fresh herbs in this recipe are seasonal for August. Seasonal produce is usually packed with more flavor, has better texture, and a higher nutrient content while also supporting local growers.
