Ingredients
- 3 cups rolled oats
- 1/3 cup coconut oil, melted
- 2 egg whites
- 2 tbsp brown sugar
- 2 tsp cinnamon
- 1/4 tsp salt
- Nonfat Greek yogurt (flavor of your choice)
Instructions
- Preheat oven to 350 degrees Fahrenheit
- In a bowl, combine the rolled oats, coconut oil, cinnamon, and salt.
- Add two egg whites to the oat mixture and stir completely until combined.
- Grease 12 muffin tins, and scoop 2 tbsp of the oat mixture into each tin. Press down until firm and create a nest. The oats need to be packed tightly to stay firm while baking.
- Bake in the oven for 18-20 minutes or until the oats are slightly brown in color.
- Allow the oatmeal cups to cool completely. Note: they will shrink in size.
- Fill the nest with Greek yogurt. You can also add toppings of your choice, such as fruits, nuts, and seeds.
