Oat Yogurt Cups

Ingredients

  • 3 cups rolled oats
  • 1/3 cup coconut oil, melted
  • 2 egg whites
  • 2 tbsp brown sugar 
  • 2 tsp cinnamon 
  • 1/4 tsp salt
  • Nonfat Greek yogurt (flavor of your choice)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit 
  2. In a bowl, combine the rolled oats, coconut oil, cinnamon, and salt. 
  3. Add two egg whites to the oat mixture and stir completely until combined. 
  4. Grease 12 muffin tins, and scoop 2 tbsp of the oat mixture into each tin. Press down until firm and create a nest. The oats need to be packed tightly to stay firm while baking. 
  5. Bake in the oven for 18-20 minutes or until the oats are slightly brown in color. 
  6. Allow the oatmeal cups to cool completely. Note: they will shrink in size. 
  7. Fill the nest with Greek yogurt. You can also add toppings of your choice, such as fruits, nuts, and seeds.
