No-Bake Energy Bites

Ingredients

  • 1 cup rolled oats
  • 1/2 medium ripe banana 
  • 2 tbsp natural creamy peanut butter 
  • 1/4 cup honey or maple syrup
  • 1/2 cup dates, chopped
  • 1 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Mix all ingredients in a bowl until combined. 
  2. Chill the mixture in the fridge for 15-20 minutes
  3. Roll into 12 balls (~1 inch) 
  4. Store in an airtight container in the fridge (up to 5 days) or freezer (up to 3 months).

Tips:

You can add other toppings for different flavors, such as coconut, chopped nuts, protein powder, etc. Although, you may need to adjust the honey if the mixture becomes too dry.
