Ingredients
- 4 cod fillets, 4-5 oz each
- 1/2 cup whole wheat breadcrumbs or panko
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 2 tbsp olive oil
- 1 garlic clove
- 2 tbsp fresh parsley, chopped
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper
- Pat the cod dry with a paper towel and season with salt and pepper
- In a bowl, mix breadcrumbs, lemon zest, parsley, garlic, a pinch of salt, and 1 tbsp olive oil.
- In a separate bowl, whisk together lemon juice, Dijon mustard, and 1 tbsp olive oil.
- Brush the cod with the lemon-mustard mixture, then press it into the breadcrumb mixture to coat the top side.
- Place on a baking sheet with the crust side up, and bake for 12-15 minutes, or until the cod is opaque and flakes easily.
