Garlic Parmesan Green Beans

Ingredients

  • 1 1/2 lbs fresh green beans, trimmed
  • 1 1/2 tbsp extra-virgin olive oil 
  • 3-4 garlic cloves, minced
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper. 
  2. Rinse the green beans and pat dry.
  3. In a bowl, toss green beans with olive oil, garlic, salt, pepper, and red pepper flakes. 
  4. Spread evenly on the sheet pan and roast for 15-20 minutes, tossing halfway, until tender-crisp and lightly browned. 
  5. Sprinkle the cheese over the beans during the last 3-5 minutes of roasting, allowing it to melt slightly. 
  6. Sprinkle lemon zest and fresh parsley before serving. Recommend serving warm.
