Fudgey Blackbean Brownies

Ingredients

  • 1 (15 oz) can black beans, drained and rinsed
  • 2 large eggs
  • 1/3 cup maple syrup 
  • 2 tbsp olive oil or melted coconut oil 
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F. Line an 8 x 8 baking pan with parchment paper. 
  2. Add black beans to a food processor and blend until completely smooth. 
  3. Add eggs, maple syrup, oil, vanilla, cocoa powder, almond flour, baking powder, and salt. Blend until creamy and well combined. 
  4. Fold in chocolate chips. 
  5. Pour batter into the prepared pan and smooth the top. 
  6. Bake for 18-22 minutes, until the center is set and a toothpick comes out mostly clean. 
  7. Let cool completely before slicing.
