  1. Heat a skillet over medium-high heat, and cook the corn dry until slightly brown. 
  2. In a bowl, mix the Greek yogurt, light mayo, cottage cheese, lime juice, garlic, and spices. 
  3. Fold in the corn, feta, cilantro, and jalapeno (if using). 
  4. Taste and adjust lime and spices. 
  5. Chill for 20-30 minutes for best flavor.

TIP: This recipe is great as a dip, side dish, or incorporated into a salad of mixed greens and protein.
