Ingredients
- 3 cups corn (fresh, frozen, or canned)
- 3/4 cup nonfat Greek yogurt
- 1/4 cup light mayonnaise
- 1/2 cup reduced-fat feta cheese, crumbled
- 1/2 low-fat cottage cheese (whipped or blended)
- 1-2 cloves garlic, minced
- Juice of 1 lime
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp chopped cilantro
- Optional: diced jalapeno
Instructions
- Heat a skillet over medium-high heat, and cook the corn dry until slightly brown.
- In a bowl, mix the Greek yogurt, light mayo, cottage cheese, lime juice, garlic, and spices.
- Fold in the corn, feta, cilantro, and jalapeno (if using).
- Taste and adjust lime and spices.
- Chill for 20-30 minutes for best flavor.
