For the Salmon
- 1 lb fresh salmon
- 2 tbsp brown sugar
- 2 tsp smoked paprika
- 2 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp salt
- 2 tbsp olive oil
For the Mango Avocado Salsa
- 2 mangos, diced
- 1 avocado, diced
- 1/4 cup cilantro, minced
- 1/4 cup red onion, minced
- 1/2 jalapeno, minced
- 1 tsp honey
- 2 tbsp lime juice + 1 tsp lime zest
- Salt to taste
Optional: Serve with a serving of brown rice, farro, quinoa, tortillas, etc.
Instructions
- Preheat the oven to 475 degrees and line a baking sheet with foil.
- Mix the spices and the olive oil to make a paste. Place the salmon skin side down on the baking sheet. Rub the paste over the top part of the salmon.
- Bake for 6-12 minutes, depending on the thickness of your salmon and desired doneness.
- While the salmon is baking, toss all the mango salsa ingredients in a bowl to combine.
