Ingredients
- 12 oz fresh salmon (or canned)
- 1 medium sweet potato
- 1/3 cup green onion, finely chopped
- 1 clove garlic, minced
- 1/4 cup parsley, chopped
- 1/4 cup breadcrumbs (or almond flour for gluten-free)
- 1 egg
- 1 tbsp Dijon mustard
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 tbsp olive oil or avocado oil
Instructions
- If using fresh salmon, cook (bake, steam, or pan-sear) then flake with a fork. If using canned salmon, drain and flake.
- Steam the sweet potato and mash it to make about 1 cup total.
- In a bowl, combine the flaked salmon, mashed sweet potato, onion, garlic, parsley, breadcrumbs, egg, Dijon mustard, paprika, salt, and pepper. Mix until well combined
- Shape into 4 patties and chill for 10-15 minutes to help them firm up.
- Heat oil in a skillet over medium heat. Cook the burger for 4-5 minutes on each side or until golden brown and cooked through.
