Ingredients
- 12 Medjool dates (pitted)
- 1/4 cup natural peanut butter (or almond butter, if preferred)
- 2 tbsp dark chocolate chips (70% or higher cocoa for a healthier option)

Instructions
- Carefully slice the dates lengthwise to remove the pit, but keep the date intact (do not cut all the way through). Gently open them up.
- Using a spoon, fill the center of each date with about 1 teaspoon of peanut butter (or almond butter). You can adjust the amount depending on how much filling you prefer.
- In a microwave-safe bowl, heat the dark chocolate chips for about 20-30 seconds, then stir until melted.
- Drizzle the melted chocolate over each stuffed date, or dip the stuffed date into the chocolate to coat it partially or fully.
- Place the stuffed dates on a plate lined with parchment paper.
- Refrigerate them for 5-10 minutes to harden.
