Ingredients
- 2 TBSP avocado or olive oil
- 1 TBSP red wine vinegar
- 1/4 tsp black pepper
- 1 Tsp salt (optional)
- 1/2 cup red onions diced
- 2 TBSP roasted red pepper diced
- 1 jalapeno cored and diced
- 5 tomatoes medium, wedged
- 3 cucumbers small, diced
Instructions
- Cut up all the veggies and spices.
- Mix all ingredients into a large bowl.
- Cover and let sit in the refrigerator for at least an hour if you desire it chilled. Serve within 3 days.
