Fresh Tomato Cucumber Salad

Total Time: 10 minutes
Serves: 6 cups 

Ingredients 

  • ​​2 TBSP avocado or olive oil
  • 1 TBSP red wine vinegar
  • 1/4 tsp black pepper
  • 1 Tsp salt (optional) 
  • 1/2 cup red onions diced
  • 2 TBSP roasted red pepper diced
  • 1 jalapeno cored and diced
  • 5 tomatoes medium, wedged
  • 3 cucumbers small, diced

Instructions

  1. Cut up all the veggies and spices.
  2. Mix all ingredients into a large bowl.
  3. Cover and let sit in the refrigerator for at least an hour if you desire it chilled. Serve within 3 days.
